2. Killing (manual or automatic), optional stunning, bleeding area
3. Scalder
4. Plucking
5. Evisceration, manual or automatic depending on capacity
6. Unloading area
7. Chilling area, either air or water chilling
8. Optional:
   • weighing
   • cut-up
   • filleting/deboning
   • packing
   • waste handling

The level of automation depends on the desired processing capacity.

• up to 1000 bph: mostly manual processing
• up to 3000 bph: either manual or semi-automatic
• 4000 up to 6000 bph: fully automatic
